Our first cooking "date" was tonight. After much butter (and you can never have too much), fillo dough, sugar, finally remembering to turn the oven on, and the like, our tummys are full, our brains are slightly sluggish, and there are smiles on our faces (and that was one long sentence!).
Tonight, Courtney concocted her amazing sweet potato casserole (Thanks Melissa!!). Very rich and with amazing "crumblies" on top. This dessert-like dish can be fickle to cook, so needs to be watched closely. Well worth it! Obtained while residing in Roatan, this recipe was worth the frequent flyer miles. -Rachel
Rachel's Armenian heritage is well-represented by her Grandma Vera's traditional cheese Boereg. Boereg is a flaky, delicious confection made from fillo dough, cheese, butter, eggs, and parsley that manages to taste both exotic and comfortable. Fillo dough can be temperamental, so this recipe is easier with two sets of hands, but if you're a fillo dough veteran, Boereg is simple and satisfying to make. -Courtney
